What is nutrient density?

Most of my life I have been a gardener, growing my own vegetables. I have learned about creating a soil that is nutrient dense. Adding carbon materials, such as leaves, twigs, and other organic matter has resulted in a transformation. The soil health is apparent from the quality of the vegetables with taste and nutrient value.

Sadly, most foods we find in the marketplace have been highly processed and lack essential amino acids which are the building blocks of protein. Most folks are not getting the right balance of amino acids as well as vitamins & minerals.

And due to this difference, organic produce had a much higher level of antioxidant compounds than regular produce. These contain flavonoids and carotenoids which protect cells from aging and prevent the type of cell damage that can lead to cancer.
